Greek Chicken and Potatoes
serves 4

You will find this the ideal busy day dinner entree. It goes together in a couple minutes and delivers lots of flavor for very little effort. Add a salad and maybe some steamed vegetables for a very satisfying meal.


4 chicken breast halves
1 lb new red potatoes, halved
3/4 cup chicken broth
3/4 cup olive oil
2/3 cup fresh lemon juice
2 tsp dried oregano
3 garlic cloves, chopped

Preheat oven to 375 degrees.

Arrange chicken in a roasting pan with the potatoes. Pour the chicken stock over all. Whisk the olive oil, lemon juice, oregano and garlic together and pour it over, too.

Bake until chicken is cooked through and the potatoes are tender, basting occasionally with pan juices, about 1 hour 15 minutes.
